My Favourite Low FODMAP Brownies

Hello friends! It’s been a while, but I’m back with a new recipe. I can’t believe it, but it’s already been over a year and a half since my first cookbook was released. Thank you for all the support! The book is consistently still at the top of the amazon “IBS books” chart.

To celebrate, I’m releasing another recipe from the book: Chocolate Walnut Brownies! These are hands down my favourite low FODMAP brownies.

These low FODMAP brownies are full of chocolatey flavour with an added crunch from the walnuts. The ingredient that helps them to stay so nice and moist is almond flour! A quarter cup of almond flour/meal is low FODMAP. If you want to learn more about almonds and the low FODMAP diet, read my blog post all about almonds.

Low FODMAP Chocolate Walnut Brownies

You will adore these delicious, rich and easy low FODMAP brownies! Low FODMAP and gluten-free baking seems to have a reputation for being difficult. Brownies are one of the easiest baked goods to make.

Equipment

  • oven
  • 8" square baking dish

Ingredients
  

  • ½ cup butter melted
  • ½ cup white sugar
  • ¼ cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup cocoa powder
  • ¾ cup low FODMAP flour blend
  • ¼ cup almond flour
  • ¼ cup walnuts optional
  • ¼ cup chocolate chips optional

Instructions
 

  • Preheat the oven to 350 F. Grease an 8 inch square baking dish.
  • In a large bowl, mix the butter, sugar, maple syrup, vanilla and eggs.
  • Stir in the baking powder, salt and cocoa powder.
  • Add the flour blend and almond flour, and stir until just combined.
  • Pour the batter into the baking dish. Spread evenly.
  • Sprinkle walnuts and chocolate chips on top, if using.
  • Bake for 20 minutes, until the middle is cooked and no longer sticky. Allow to cool for at least 15 minutes before removing from the pan. Store in a container for a few days or freeze for up to 1 month.

Notes

Cooking tip: Don’t over bake the brownies or they can become dry. Test the middle by sticking a butter knife in. If the knife comes out with wet batter stuck to it, bake it for a couple more minutes and then test again.
Variation tip: Pecans are a nice alternative to walnuts.
